BABA'S   KITCHEN
Christ Our Savior Orthodox Church has many fund raisers to help support the
church funding needs.  The women make rolls, piroghis, and sponsor dinners at
various times throughout the year.  Cookbooks with some of our favorite recipes
are also available at the church hall. Watch the newspaper and listen to the radio
for dates of these various  fund raisers.  The  church has been greatly supported  
by the community in all of its fund raising efforts and looks forward to your
continued patronage in the 2010 events.
                             MEATLESS RECIPES FOR LENT
                                  EGGPLANT PARMIGIANA

2 C. SPAGHETTI SAUCE               2 C. SHREDDED MOZZARELLA CHEESE (8 OZ.)
1 LARGE EGG                               2 EGGPLANTS NOT PEELED, CUT INTO 1/4 " SLICES
2 TBSP. WATER                             (CAN SUBSTITUTE ZUCCHINI FOR EGGPLANT)
2/3 CUP DRY BREAD CRUMBS
1/3 C. GRATED PARMESAN
1/4 C. OLIVE OIL  

Heat oven to 350 degrees.  Mix egg and water.  Mix bread crumbs and Parmesan cheese.  Dip
eggplant slices into egg mixture and coat with bread crumbs.
Heat oil in skillet over medium heat.  Cook about 5 minutes and turn
once.  Cook until lightly browned and drain.  Place layer slices in
ungreased 13 x 9 pan and overlap slices.  Spoon spaghetti sauce
over slices.  Sprinkle with 1 cup Mozzarella cheese.  Repeat with
slices, sauce, and cheese.  Bake at 350 degrees for 25 to 30 minutes
(or until cheese is bubbly) and don't cover.  Bake uncovered and
cheese will be lightly browned.

4 MEDIUM POTATOES
1 TBSP. SALT
1 EGG
3 C. FLOUR
BROWNED BUTTER OR OLEO & ONIONS
COTTAGE CHEESE OR 1 SMALL HEAD OF CABBAGE, CHOPPED AND FRIED IN OLEO

Grate potatoes. Add salt,egg, and flour. Dough should be fairly thick. Add flour if needed. Put
dough on plate. Use spoon to scrape off a small portion at a time into boiling water. Boil about
15 minutes. Stir to prevent scorching. Drain. Rinse once very quickly. Add cottage cheese or
cabbage with oleo and onions. Salt and pepper to taste.
